Pumpkin Soup (the best you've ever tasted!)

As an Australian I'd just like to say, 'No, No, No!'. Not just any pumpkin will do for soup. Short of availability of Queensland Blue, your next best is a butternut. Yes it is a pumpkin. You don't eat the skin so it's a pumpkin. Only called a squash here because of the bad press pumpkins get in this country. Don't try to eat that horrible watery thing you cut up for Jack-o-lanterns. Maybe after long roasting to evaporate the water and caramelise the sugars something edible might be the outcome, but not for soup. Then, nutmeg is required - just a tad. And if you put the cream in a squirty bottle, (give it a good shake to make it airy) make a spiral on top of the soup and then draw a skewer through it from centre to the outside, about five times you;ll have a lovely autumnal spider's web.
