Invoicing: change the invoice number?

I've just been spending all afternoon looking into whether we could move our invoicing over to Tapestry. We would want to continue with our existing invoicing numbers and naming scheme. Is there anywhere I can change this setting? Thanks

For example. we always begin each invoice with a code representing the academic year and then restart the numbering. i.e. from  September our code will begin:

25/26 - 001 and so on.
