Can Anyone Suggest A Good Digital Recording Device?!

I've recently taken over as Music leader in my school and would like to incorporate more recording of children's performances in order for them to assess their own work and to aid teacher assessment. I think it would be great to have some recorded music evidence as well.

 

We currently have the little yellow hand-held Easispeak microphones, which are easy to use and I like the way you can just use them as a USB and transfer recordings easily onto a computer but the sound quality is not good and especially when recording larger groups of children singing or performing.

 

Can anyone suggest a good device they've seen or used that we might be able to invest in?
