We have a new child starting and I wanted to find some information I could share with the other staff but wanted to find something that was easy to read

I'm sure you know but your best port of call is the childs parents. As will all cultures there are differences about practices between individual families. :o

I am sure also the parents will be pleased to know that you are interested in their culture. xD

Search for coxhoe and durham. Click on curriculum. Click on RE. Scroll down to Hinduism and you will find an excellent site ngfl cymru which I have been using for Hinduism - it is very simply put and very visual with some nice interactive activities.
