My deputy always bakes us a cake for our birthdays and i would like to return the favour for her birthday in July. Shes always baking, i dont wish i had the time. Have looked through my cook books but thought you might have 'tried and tested' receipes...not to fancy please cheers Jo Quote

Very Chunky Chocolate Brownies Simply Cadburys Chocolate, by Joanna Farrow, published by Hamlyn 200g Dairy milk chocolate 300 g Bourneville chocolate (broken into pieces) 225 g unsalted butter, softened 3 eggs 225 g light muscovado sugar 75 g self-raising flour 175 g walnuts (optional - I prefer it without) Grease and line a 28 x 20 cm shallow baking tin, preheat oven to 190 c/375F/Gas 5. Roughly chop milk chocolate. Melt plain chocolate then stir in the butter. Beat together the eggs and sugar, then beat in the melted plain chocolate mixture. Stir in the flour, walnuts if using and milk chocolate. Turn into the tin and level surface. Bake until the centre feels just firm on the crust but soft underneath (take care not to overcook).. Leave to cool in the tin, then turn out and cut into squares. Quote
Guest Posted June 12, 2006 Posted June 12, 2006 Here's a very easy and usually successful one I've used a lot. It's quick to mix: 100g soft margarine 100g caster sugar 2 large eggs, beaten 100g SR flour 1 tsp baking powder Heat oven to Gas 4 350F 180C Grease & line 2 x 17.5 cm diameter tins Put all ingredients into a large bowl. Beat for about 3 minutes until very smooth. Divide between the tins Bake for 25-30 minutes until they spring backwhen lightly pressed. Turn out when they've cooled slightly. When cold can be sandwiched with jam, butter icing etc. Choc version: 1st blend 1 generous tablespoon of cocoa powder with 2 tbsp hot water before adding other ingredients. Make sure it's all thoroughly mixed. Choc icing: 40g butter melted, stir in 25g cocoa. Cook over a low heat for a minute. Take off heat, add 2-3 tbsp milk, and 100g sieved icing sugar. Beat well till cool & of a spreading consisitency. Put on top of cake. It's very easy to use this recipe to make a much bigger one, e.g. in a rectangular tin, if you need to make it for lots of people. The quantities multiply quite easily. Quote
